  1. In a sieve rinse sama rice thoroughly under running water. Transfer it to a bowl and add water to soak the sama rice. Soak for couple of hours.
    Remove water from sama rice and
    transfer it to a food processor.
  2. Add yogurt, lemon juice, ginger paste, chilli paste, coconut and salt into the food processor. Pulse until batter is smooth. Transfer the batter in a bowl and add the grated carrots. Grease the idli moulds and boil water in the idli pressure.
  3. Add citric acid and ENO to the batter and whisk for 2-3 minutes until fluffy and frothy. Spoon the batter into the greased idli and steam for 7 to 8 minutes or insert a toothpick and check. The toothpick should come out clean. Turn off the gas and remove the idli moulds. Allow it to cool for a few minutes. Gently remove the idlis from each mould and serve hot with coconut chutney.
    Alternatively you can make dahi vada as well.
