  20. 2 bay leaves

Instructions to make to make Chole

  1. Wash and soak chole overnight.Next day, boil tea in a pot and strain it. Add this water to chole, with bay leaves, black cardamom, salt, and baking soda.
  2. In a pan take mustard oil, heat it. Add ajwain to it. Now add chopped onion and sauté it till it is translucent in color.Now add ginger garlic paste.green chillyalso. Stir and cook Then add tomatoes purée to it and cook. Cover and cook.
  3. In a separate bowl take all the dry spices +salt and dry fenugreek leaves. Mix. Now add this to tomatoes and onion masala.
  4. Stir and cook nicely. When masala is cooked probably add boiled chole (after boiling strain chole, do not throw the water.) Mix properly with masala so that choles are nicely coated. After that add boiled and strained water of chole.
  5. Cover and cook for 5-10 min. In a tempering pan add ghee, hing, slit green chill. Switch of the flame. Add red chilli powder. Pour it on chole.
  6. Chole is ready to enjoy with hot kulchas.
